Recipe: Whole Grain Granola Bars


1 1⁄2 cups rolled oats (not quick-cook)
1⁄4 cup oat bran 
1⁄4 cup almonds, finely chopped
1⁄2 tsp ground cinnamon 
2 tbs plus 1 tsp olive oil 
1/3 cup honey 
1⁄2 tsp pure vanilla extract 
3⁄4 tsp almond extract
1/2 cup of organic raisins with no added sugar




Preheat oven to 350°.

Lightly oil a baking sheet.
Mix all dry ingredients in a bowl.
Add oil, honey, vanilla, and almond extract.
Mix until all ingredients are moistened.
Place mixture on prepared sheet and press into the shape of a rectangle. Wet hands lightly while working mixture.
Bake 12 minutes.
Remove from oven and cut into 16 bars with a very sharp knife.
Separate bars slightly and return to oven for 5 more minutes.
Remove from oven and place on wire rack to cool. Enjoy!
