Recipe: Strawberry Cucumber Salad with Mint and Basil

This recipe makes 4 servings.


  • 8 oz. strawberrieshulled and halved
  • 1 english cucumberseeds removed, sliced
  • 1 small red onionthinly sliced
  • 1/2 c. fresh basilthinly sliced
  • 1/4 c. fresh mintthinly sliced
  • 2 tbsp balsamic vinegarto taste
  • Sea saltto taste
  • Cracked black pepperto taste


  • Slice the strawberries, cucumber, red onion, basil, and mint. Gently toss all ingredients in a large bowl.
  • Drizzle with the balsamic vinegar, then season with salt and pepper to taste. Serve immediately. This keeps in the fridge in a sealed container for up to two days.
